Wednesday Tacos

You know it’s love when he brings you your favorite tacos to fuel your epic Wednesday night sexing. And with the workout you’re getting, you’ll love all the protein in these delicious chicken-quinoa concoctions. Did Shaw have any idea he was a personal trainer? One thing’s for sure, reading about his and Chloe’s exploits will definitely work up your appetite.


2 chicken breasts
1 jar salsa verde
¼ cup quinoa
1 bunch cilantro
1 bunch fresh mint
½ stemmed and seeded jalapeno, roughly chopped
2 TB EVOO
2 TB red wine vinegar
1 cucumber, peeled and diced
Cotija cheese (if you can’t find it, feta would work)
Tortillas
Into your slow-cooker with the chicken, the salsa, the quinoa, and a smidge of salt and pepper. Turn it on low and forget about that ish for the next six hours, cause it’s Wednesday and you need to get ready for hump day. Pro tip: “shred” the chicken by smooshing it with a potato masher when you’re ready to eat.
For the toppings, just toss your herbs, jalapeno, oil, and vinegar into the food processor with a little salt. Stir the cucumber pieces into the resulting sauce. Pile everything on tortillas, pour some tequila, and prepare to be transported to a taco shack on a Floridian island.
