Kayti's Kitchen: Mister O Cake


Welcome to the first round of Kayti's Kitchen! As most of you (should) know by now, Kayti McGee is one of my talented-and-so-sexy work wives, and is the goofy half of our duo Laurelin McGee. What you may not know is that Kayti is an absolute domestic goddess in the kitchen, and when we both lived in the greater Denver area, she'd come over to my house to write with me and then end up making me dinner. Best. Wife. Ever!

Now that I've broken her heart and moved to Kansas City–blame Sierra Simone, she talked me into it–I'm domming Kayti into cooking for me from afar. Each week, I will pick a new book release and challenge her to come up with an original recipe for it.

Mister O Cake 

Whipped up by Kayti McGee

Harper Holiday considers cake her religion. When you bake this one up for your Mister, his new religion will be giving you as many O’s as you can handle. It comes together in one bowl so quickly he’ll think you’re Anna the Amazing. 
Don’t skip the ganache frosting–chocolate church is in session.

Cake
½ cup full-fat yogurt
1 ¼ cup sugar
3 eggs
1 cup flour
½ cup cocoa powder
1 Tb baking powder
1 Tb finely ground coffee beans
½ cup oil
Pinch of salt

Ganache
½ bag semi-sweet chocolate chips
1 cup heavy cream


Preheat oven to 350 and lube up a cake pan like you mean it. Combine all ingredients from yogurt through salt in a bowl, and mix until it becomes smooth, this may take a minute. Pour into cake pan and bake for 30-35 minutes. After cooling for about 20 minutes, remove to a platter.

While the cake bakes, heat the cream by pouring it into a glass bowl that you set above a boiling pot of water. (Because no one actually owns a double boiler.) When it’s warm enough to melt them, stir in the chocolate chips and remove from heat. Let the ganache cool to room temperature, then beat with a mixer for 2-3 minutes until desired consistency is reached. You know...fluff it. 

Spread the ganache on the cake. Catch his eye, and lick a little off your finger with a wink!
