Say You'll Stew

This is downhome cooking, the exact kind of thing you want your mama to serve you if you’ve just rolled back into the ranch after like seventeen years and two good heartbreaks. It cooks all day, freeing you up to go ride horses, harass your old buddies, and potentially make out in the stables with Zach. If indeed that does happen, you may discover you require a drink, and lucky you, there’ll be beer left over from the recipe.

2 carrots, chunked
1 celery stalk, sliced
1 sweet potato, cubed
1 onion, diced
1 pkg mushrooms (optional for the picky)
2 cloves garlic, minced
2 Tb flour
1 small can tomato paste
1 lb beef stew meat
2 Tb herbs de Provence (can sub a mix of rosemary and thyme)
1 tsp cinnamon
Beer (about a can and a half)
Tube of biscuit dough

This looks like more work than it is, really. Just toss the veg, meat, tomato paste, flour, and spices into a crockpot and stir. Add enough beer to cover everything. A little salt and pepper never hurts anyone either. (Unless you put it in your eye, I guess, but your stupidity only extends to your love life. And your finances.)

Cook all day on low, you know, like your slow-simmering passion. About 20 minutes before you’re ready to serve, put the biscuit dough on top of the stew and let them steam into dumpling-y goodness. Everyone’ll stay when you serve it up.
